Impossible Pumpkin Pie





 This is a quick and easy pie recipe from an old book I found call " Mr. Food Cooks Like Mama"
The best part of this recipe is that you don't have to make a crust.  It makes it's own crust while baking!


Ingredients:

1 Can ( 16 Ounces) Pumpkin
1 Can ( 12 Ounces) Evaporated Milk
2 Tablespoons Butter, Softened
2 Eggs
3/4 Cup Sugar
1/2 Cup Biscuit Baking Mix
1 1/2 Teaspoon Pumpkin Pie Spice
2 Teaspoons Vanilla Extract

Directions:

Preheat oven to 350 degrees.  Place all ingredients in a blender and blend on high for one minute or place all ingredients in a large bowl and beat by hand 2 minutes with a hand beater.  Pour mixture into a greased 9 or 10 inch pie plate.  Bake for 50-60 minutes or until knife inserted in center comes out clean.  Cool before serving.
