Blueberry Buttermilk Coffee Cake






Makes a 9x13

( Recipe can be cut in half and baked in a 8x8 or a 10-inch round pan)



Cake:

1/2 Cup ( 1 Stick) salted butter, room temperature
1 1/2 Cups Brown Sugar
1 Large Egg
1 Teaspoon Vanilla
1 Cup Low Fat Buttermilk
2 Cups Flour
1 Teaspoon Baking Soda
3 Cups Blueberries


Topping:

1/4 Cup Sugar
2 Teaspoons Cinnamon


Directions:


Heat oven to 350 degrees

Spray a 9x13 Pan  

With electric mixer, cream butter and sugar on med. until light and fluffy.  Add the egg and combine well.  Add the buttermilk and combine well.  Add the flour and baking soda, mix in just until combined

Gently turn in blueberries.  

Topping:  Mix the sugar and cinnamon together in a small bowl.  Sprinkle across the top.  Sprinkle a few blueberries around the top.

Bake for 30-35 minutes until the cake begins to pull away from the pan's edges and a knife inserted in the center comes out clean.

Cool before serving.
